White wine with yellow-green tints, mellow with 60g/L residual sugar. Fruity and light, round, with a lovely freshness and length on the palate. Aromas of white fruits (pear, apple) with a hint of lemon. Goes well with aperitifs, Asian/spicy cuisine and poultry in sauce, blue-veined cheeses and fruit-based desserts.
100% Pinot gris, 5-year-old vines harvested by hand when over-ripe (12 to 14 % of probable alcohol). Organic vineyard management.
Clay-limestone with flint with grass between the rows.
Skin maceration, long pressing, cold settling for 4 to 6 days. Fermentation in temperature-controlled stainless steel vats. Aged on fine lees for five months.
